Recipe Moment: Mr. Schwump's Sweet Potato Souffle

Doug Nadvornick shares his recipe for Mr. Schwump's Sweet Potato Souffle.

Ingredients:

  • 3 cups cooked, mashed sweet potatoes
  • 1/2 cup orange juice
  • 1/2 cup milk
  • 1 tsp vanila extract
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 6 tbls butter, melted
  • cinnamon to taste
  • 1/2 cup brown sugar
  • 1/3 cup flour
  • 1 cup pecans
  • marshmallows

Instructions:
Grease baking dish. In a mixing bowl combine the sweet potatoes, orange juice, milk, vanilla, sugar, salt, 3 tablespoons of melted butter, and cinnamon. Beat until fluffy, and pour into the prepared dish. Melt the remaining butter and add the brown sugar, flour, and pecans. Sprinkle the mixture over the potatoes. 

Bake in a 350 degree oven for 35 minutes. Top with marshmallows and bake until browned.
